Automated dough mixer feeding system for the baking Industry

Project Scope

One of the client’s main needs was to have an automated system with complete control to feed three production lines for French bread and sweet bread.

The entire plant is controlled through the supervisory system, reducing the need for labor, improving process quality due to lower operational variability, and increasing plant productivity to its maximum production capacity, according to the project execution.

Big-bag reception module

The module consists of two big bag unloaders, with feeding by hoist and monorail.

The system also includes aspiration through a relief filter, exhaust fan and noise attenuator, reducing dust dispersion in the environment during the opening and unloading of the bags.

Flour cleaning and control module

The cleaning module includes a safety sieve and magnetic grid, designed for quick cleaning and to prevent impurities from entering the system.

It is also possible to integrate a disinfestation unit into the system, increasing the food safety level of the process.

Product conveying is carried out by screw conveyors and a pneumatic conveying line sized to prevent leaks and product accumulation points.

 

Scale for dosing system

An innovative concept for a dosing scale with synchronized weighing and discharge modules, complete with an aspiration system to reduce measurement variability to minimum levels. Its design speeds up the process and avoids downtime during operation.

Microingredient storage, extraction, dosing and weighing module

The module consists of electronic dosing scales, an extraction and dosing system, a checkweigher and a vacuum pneumatic conveying line.

The system design allows dosing variations below 1% and prevents the intake of high-temperature and high-humidity air into the line, preserving the quality of the ingredients.
